For the Yogurt Base

  • 1 cup Greek yogurt (choose plain for creaminess) Can use regular yogurt or dairy-free versions for a vegan option.
  • 1 tbsp honey Maple syrup or agave syrup are great vegan alternatives.
  • 1 tsp vanilla extract Splash to enhance flavor.
  • 1 tsp lemon zest Use a microplane for zesting.

For Layering

  • 1 cup fresh blueberries Ripe and juicy.
  • 1/4 cup granola For crunch; add just before serving.
  • 2 tbsp chopped nuts Walnuts or almonds for healthy fats.
  • 1 tbsp chia seeds For fiber and omega-3s; can replace with flax seeds.

Instructions
 

Preparation

  • In a mixing bowl, combine the Greek yogurt, honey, and vanilla extract. Stir gently until fully mixed.
  • Stir in the lemon zest to the yogurt mixture.

Layering

  • Layer half of the yogurt mixture at the bottom of serving cups.
  • Top the yogurt with half of the fresh blueberries.
  • Repeat layers with the remaining yogurt mixture and the rest of the blueberries.

Adding Crunch

  • Top each serving with granola, chopped nuts, and chia seeds.

Notes

Store in an airtight container in the refrigerator for up to 2 days. Avoid adding granola before storing. Best enjoyed cold.
