For the Buckle

  • 2 cups fresh blueberries Fresh blueberries are best, but you can use thawed frozen blueberries.
  • 1 cup all-purpose flour You could use whole wheat flour for a healthier option.
  • 1 cup granulated sugar Standard white sugar.
  • 1/2 cup unsalted butter, softened Can use margarine or coconut oil as alternatives.
  • 1 large egg
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp salt

For the Streusel Topping

  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour For streusel.
  • 1/2 tsp cinnamon

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9-inch square baking pan.
  • In a bowl, combine 1 cup of all-purpose flour, baking powder, and salt.
  • In another bowl, cream the softened butter and granulated sugar until light and fluffy. Add the egg, milk, and vanilla extract, mixing well.
  • Gradually add the flour mixture into the wet ingredients, stirring gently until just combined.
  • Fold in the fresh blueberries until they are distributed throughout the batter.
  • Transfer the batter into the prepared baking pan and spread it out evenly.
  • In a bowl, mix together the brown sugar, 1/4 cup flour, and cinnamon for the streusel. Sprinkle this mixture evenly over the batter.

Baking

  • Place the baking pan in the oven and bake for 40-45 minutes, checking for doneness with a toothpick.
  • Allow the buckle to cool in the pan for a bit before transferring to a wire rack to cool completely.
