Wet Ingredients

  • 1 cup milk (or dairy-free alternative) Room temperature preferred.
  • 2 large eggs Can replace with flax eggs for vegan.
  • 1/4 cup maple syrup (or honey) Use agave nectar for vegan.
  • 1 teaspoon vanilla extract

Add-ins

  • 1 cup mixed berries (fresh or frozen) Use any favorite fruits.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a baking dish with cooking spray or butter.
  • In a large bowl, combine the dry ingredients: rolled oats, baking powder, salt, and cinnamon (if using).
  • In another bowl, whisk together the wet ingredients: milk, eggs, maple syrup, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the mixed berries.
  • Spread the mixture evenly into the prepared baking dish.

Baking

  • Bake in the preheated oven for 25-30 minutes until the top is golden and the center is set.
  • Let cool for a few minutes before slicing into squares and serving.

Notes

Enjoy warm with a drizzle of maple syrup on top. Leftovers can be enjoyed plain or reheated with milk for extra creaminess. Customize with toppings like nuts or seeds if desired.
