Preparation

  • Toast your bread until golden brown and crispy.
  • Halve the ripe avocado, remove the pit, and scoop the flesh into a bowl. Mash it with a fork until creamy but still slightly chunky.
  • Stir in the lemon juice, sea salt, black pepper, and red pepper flakes to the mashed avocado. Adjust the seasonings to your taste.

Assembly

  • Spread a layer of hummus on each piece of toast, then add a spoonful of the avocado mixture on top.
  • Scatter the halved cherry tomatoes and sprinkle the fresh herbs over the toast. Drizzle with olive oil.
  • Top with microgreens or sprouts and a final pinch of salt and pepper.
