  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 large apple, grated Fresh apples provide the best flavor.
  • 1/2 cup applesauce You can substitute with Greek yogurt or mashed banana.
  • 1/4 cup honey or maple syrup Honey gives a richer flavor.
  • 1/2 teaspoon vanilla extract
  • 1/2 cup milk (or milk alternative) Common substitutes include almond milk or coconut milk.

Optional Add-ins

  • 1/2 cup chopped nuts or raisins Optional but recommended for added texture and flavor.

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with liners or spray with cooking spray.
  • In a large bowl, mix together rolled oats, cinnamon, baking powder, and salt.
  • In another bowl, whisk together the grated apple, applesauce, honey (or maple syrup), vanilla extract, and milk until combined.
  • Pour the wet mixture into the dry ingredients and stir until just combined.
  • Spoon the mixture into the muffin tin, filling each cup about 3/4 full.

Baking

  • Place in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the oatmeal cups to cool in the tin for about 5 minutes before transferring to a wire rack.

Notes

Store in an airtight container for up to 5 days in the refrigerator. For longer storage, wrap in plastic wrap and aluminum foil and freeze.
