Cookie Ingredients

  • 2 3/4 cups all-purpose flour Gluten-free all-purpose flour mix can be used with adjustments.
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened Salted butter can be used, but reduce added salt.
  • 1 1/2 cups white sugar
  • 1 none egg For an egg-free version, use a flax egg.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 3/4 cup confectioners' sugar For dusting before serving.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a bowl, mix together the flour, baking soda, and baking powder.
  • In another large bowl, cream the softened butter and sugar together until fluffy.
  • Beat in the egg and mix in the vanilla and almond extracts.
  • Gradually blend the dry mixture into the wet mixture.
  • Drop rounded tablespoons of dough onto ungreased baking sheets, leaving space between each cookie.

Baking

  • Bake in the preheated oven for 8 to 10 minutes until the edges are lightly golden.
  • Let them cool on the baking sheet for a few minutes before transferring them to a wire rack.
  • Dust with confectioners' sugar before serving.

Notes

Store cookies in an airtight container for up to 1 week. Freeze cookies in a single layer for up to 3 months.
