  • 1 tablespoon turmeric powder Known for its vibrant color and health benefits.
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced Be careful not to burn it.
  • 6 cups vegetable broth Adds depth of flavor to the soup.
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Lemon juice (optional) Can brighten the dish.
  • Fresh parsley for garnish (optional)

Preparation

  • In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, sautéing until they begin to soften, about 5 minutes.
  • Stir in the minced garlic and turmeric powder, cooking for an additional minute until fragrant.
  • Add the red lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for about 20-25 minutes, or until the lentils are tender.
  • Season with salt, pepper, and lemon juice to taste.
  • Serve hot, garnished with fresh parsley if desired.

Notes

Tip: For a creamy version, stir in a can of coconut milk during the last 5 minutes of cooking.
