  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream Can substitute half-and-half for a lighter version.
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese Freshly grated is recommended for better flavor.

Instructions
 

Cook the Pasta

  • Begin by boiling a large pot of salted water. Add the fettuccine and cook according to package instructions, until al dente. Once finished, drain and set aside.

Season the Chicken

  • In a mixing bowl, toss the cubed chicken with Cajun seasoning until well-coated.

Sauté the Chicken

  • In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken and cook until golden brown and cooked through, about 6-8 minutes. Remove the chicken and set aside.

Sauté Onions and Garlic
