  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened Can use margarine in a pinch.
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 1 tablespoon vanilla extract
  • 2 large eggs
  • 2 cups semi-sweet chocolate chips Alternatives include white chocolate or peanut butter chips.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, whisk together the flour, baking soda, and salt.
  • In a separate bowl, cream together the softened butter, granulated sugar, and brown sugar.
  • Add in the vanilla extract and eggs, mixing until well combined.
  • Gradually blend in the dry ingredients, then fold in the chocolate chips.
  • Transfer the mixture into a greased pie dish and spread evenly.

Baking

  • Bake for 30-35 minutes, or until the edges are golden brown.
  • Allow the cookie pie to cool before slicing and serving.

Notes

Serve warm with a scoop of vanilla ice cream. Store in an airtight container for up to 4 days, or freeze for up to 3 months.
