  • 2 cups cooked chicken, shredded Shredded rotisserie chicken works perfectly.
  • 1/4 cup buffalo sauce Store-bought or homemade.
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup celery, diced
  • 1/2 cup carrots, shredded
  • 1/4 cup blue cheese crumbles Use feta cheese as an alternative.
  • Salt and pepper to taste
  • Olive oil (optional) Use infused olive oils for extra flavor.

Preparation

  • In a large mixing bowl, add the shredded chicken and pour in the buffalo sauce. Mix well until the chicken is fully coated.
  • In meal prep containers, start by adding a base of mixed greens. Layer the buffalo chicken on top, followed by cherry tomatoes, diced celery, and shredded carrots.
  • Sprinkle blue cheese crumbles over the salad.
  • Season with salt and pepper to taste.
  • Drizzle with olive oil if desired.
  • Cover your salad containers and refrigerate. They can be eaten throughout the week.

Notes

Experiment with flavors, keep the greens fresh by layering wetter ingredients on top, and consider serving with ranch dressing on the side.
