  • 1/2 cup nutritional yeast Gives a cheesy flavor without dairy.
  • 1/4 cup lemon juice Adjust to taste.
  • 1-2 pieces jalapeños, seeded and chopped Heat level is customizable.
  • 1 clove garlic Fresh garlic is recommended for best flavor.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon cayenne pepper (optional) For extra spiciness.
  • as needed cooking water Water, as needed for blending Adjust to achieve desired consistency.

Preparation

  • Soak the cashews in water for at least 4 hours or up to overnight.
  • In a blender, combine the soaked cashews, nutritional yeast, lemon juice, jalapeños, garlic, salt, and cayenne pepper (if using).
  • Blend on high until smooth and creamy, gradually adding water to achieve your desired consistency.
  • Taste the dip and adjust the seasoning if needed, adding more salt or lemon juice as required.
  • Serve immediately with tortilla chips or fresh veggies or refrigerate until ready to enjoy.

Notes

Garnish with chopped cilantro or green onions for added freshness. Store the dip in an airtight container in the refrigerator for about 4-5 days, or freeze for up to 3 months.
