  • 4 pieces chicken thighs Perfect for slow cooking.
  • 8 oz egg noodles Cook according to package instructions.
  • 1/4 cup soy sauce Use tamari for a gluten-free version.
  • 1/4 cup honey Substitute with brown sugar if needed.
  • 4 cloves garlic, minced Fresh garlic is recommended.
  • 1 tablespoon ginger, minced Fresh ginger preferred for flavor.
  • 1/2 cup chicken broth Add more as needed.
  • 2 tablespoons cornstarch Used to thicken the sauce.
  • 2 tablespoons water For mixing with cornstarch.
  • 1 tablespoon sesame oil Can be omitted but adds flavor.
  • To taste Green onions for garnish Add when serving.

Instructions
 

Preparation

  • Layer the chicken thighs in the crockpot followed by soy sauce, honey, minced garlic, minced ginger, and chicken broth. Stir gently.
  • Cover with the lid and set to low, cooking for about 6-8 hours or until the chicken is tender.
  • Once cooked, remove the chicken, shred it, and return it to the crockpot.
  • Make a slurry by mixing cornstarch and water, then stir it into the crockpot.
  • Increase temperature to high and cook for an additional 30 minutes.
  • While the sauce thickens, boil the egg noodles according to package instructions until al dente.
  • Drain the noodles and mix them with the shredded chicken and sauce, drizzling sesame oil over the top.

Notes

Serve with green onions and consider pairing with drinks like iced tea or lemonade. Store leftovers in an airtight container for up to 4 days in the refrigerator, or freeze up to 3 months.
