Ingredients
  

Main Ingredients

  • 1.5-2 lbs smoked sausage or kielbasa, sliced into ½-inch rounds Turkey or chicken sausage can be used for a leaner option.
  • ½ medium green cabbage, cored and chopped into bite-size pieces Approximately 6–7 cups.
  • 1 medium onion, finely chopped
  • 3-4 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 can (14-15 oz) diced tomatoes (fire-roasted if you like)
  • 3 cups low-sodium chicken or beef broth Add more for soupier bowls.
  • 1 red bell pepper diced (optional, for sweetness)

Spices and Seasonings

  • 1 tbsp sweet paprika
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ½ tsp black pepper
  • ¾-1 ¼ tsp kosher salt To taste.
  • 1-2 tsp red wine vinegar or apple cider vinegar Finish to brighten.
  • 1-2 tsp brown sugar or a pinch of allulose Optional, to balance acidity.

Finishing Touches

  • Olive oil Only if you choose to brown the sausage.
  • Fresh parsley, chopped For garnish.

Instructions
 

Preparation

  • In a skillet, heat a drizzle of olive oil over medium heat. Add the sliced sausage and brown them for about 3–4 minutes until they develop a nice golden color.
  • In your slow cooker, layer in the browned sausage (or raw, if you skipped that step), chopped cabbage, onion, garlic, crushed tomatoes, diced tomatoes, broth, and optional bell pepper.
  • Sprinkle in the sweet paprika, oregano, thyme, black pepper, and salt. Stir everything together until well combined.

Cooking

  • Cover your slow cooker with a lid and set it to cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  • Once cooked, stir in the red wine or apple cider vinegar and brown sugar (if using) to balance the stew's acidity.

Serving

  • Ladle the stew into bowls, garnish with freshly chopped parsley, and enjoy your hearty meal!

Notes

For a rustic touch, serve the stew directly from the crockpot. Add a dollop of sour cream or a sprinkle of cheese on top for creaminess.
