  • 2 lb fresh green beans, trimmed Fresh green beans are recommended, but frozen can be used if thawed and patted dry.
  • 3 tbsp olive oil Essential for crisping; can substitute with avocado oil or melted coconut oil.
  • 1 tsp garlic powder or 2 garlic cloves, minced
  • 1 1/4 tsp kosher salt, to taste
  • 3/4 tsp black pepper
  • 1/2 tsp smoked or sweet paprika (optional)
  • 3/4 cup freshly grated Parmesan, divided Freshly grated Parmesan provides the best flavor.
  • 1 tsp lemon zest
  • pinch red pepper flakes (optional)

To Finish

  • 1 tsp extra-virgin olive oil
  • flaky sea salt
  • 2 tbsp chopped parsley
  • lemon wedges

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C) and place a large, light-colored sheet pan inside.
  • Rinse green beans under cold water and pat them completely dry with a clean towel.
  • In a large bowl, toss the green beans with olive oil, garlic, kosher salt, black pepper, and smoked paprika if using.
  • Carefully remove the hot sheet pan from the oven and spread the seasoned green beans in a single, even layer.

Cooking

  • Roast the beans in the oven for about 10 minutes.
  • Halfway through roasting, shake the pan to promote even cooking.
  • Sprinkle half of the grated Parmesan over the beans after 10 minutes, toss them, and roast for another 7-10 minutes until edges are blistered and golden.

Finishing Touches

  • Once done, toss the roasted green beans with lemon zest, remaining Parmesan, a splash of olive oil, chopped parsley, and red pepper flakes if desired.
  • Serve your crispy green beans with extra lemon wedges and a sprinkle of flaky sea salt.

Notes

Storage: Refrigerate leftovers in an airtight container for up to 3 days or freeze in a freezer-safe bag. Reheat in a preheated oven at 375°F for about 5-7 minutes.
