  • 1 small Onion Finely chopped
  • 2 cloves Garlic Minced
  • 1 cup Cheese (optional) Meltable types like cheddar or mozzarella
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 4 pieces Flour tortillas or flatbreads
  • 2 tablespoons Butter or olive oil For pan-frying
  • 1 teaspoon Paprika or smoked paprika
  • 2 tablespoons Fresh parsley or chives Chopped finely

Notes and Substitutions

  • Ham: You want a quality ham for the best flavor. If you can’t find ham, turkey or chicken slices can work as well. Just ensure that they are seasoned well.
  • Potatoes: Waxy potatoes like Yukon Gold maintain their shape and provide a creamy texture. If you use starchy potatoes (like Russets), they’ll be fluffier, which can change the wrap's texture.
  • Cheese: While cheese is optional, it adds creaminess and flavor. If you’re looking for a non-dairy option, try nutritional yeast or a vegan cheese substitute.

Preparation

  • Peel and dice the potatoes into small cubes. Rinse them under cold water to remove excess starch.
  • Optional: Cook the potatoes in salted water for 10 minutes to soften them.

Cooking

  • In a large skillet, add 1 tablespoon of butter or olive oil over medium heat. Add the diced potatoes, season with salt and pepper, and cook until golden brown and crispy for about 10-15 minutes.
  • Push the potatoes to the side of the skillet. In the space, add another tablespoon of butter or oil, and sauté the chopped onion and minced garlic until fragrant and translucent, around 3-4 minutes.
  • Combine the sautéed onions and garlic with crispy potatoes. Gently fold in the ham and cheese (if using), sprinkle with paprika and chopped herbs.

Assembly and Cooking

  • Lay out the tortillas. Spoon the mixture into each, then fold the sides and roll to enclose the filling.
  • In the skillet, add more butter or oil, and cook the wraps seam-side down for 3-4 minutes on each side until golden brown and crispy.

Serving

  • Remove from skillet and let cool for a minute before slicing. Serve hot with a dipping sauce or salad.

Notes

Store in an airtight container in the fridge for up to 3 days or freeze for 2 months. Reheat in a skillet or oven for best results.
