Ingredients
  

For the Chicken

  • 2 pieces chicken breasts Can be substituted with turkey breast or plant-based protein.
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste

For the Wrap

  • 4 pieces tortillas Use whole grain, spinach, or gluten-free tortillas if desired.
  • 1 cup lettuce, chopped Use heartier types of lettuce like romaine.
  • 1 piece tomato, diced
  • 1 piece cucumber, sliced
  • 1 cup cheese (optional) Shredded cheese melts beautifully.
  • Mayonnaise or dressing of choice Can substitute with yogurt, hummus, or vinaigrette.

Instructions
 

Cooking the Chicken

  • In a skillet over medium heat, add the olive oil. Once the oil is hot, place the chicken breasts in the pan and cook for about 6-8 minutes on each side until golden brown and no longer pink in the middle. Season with salt and pepper.
  • Let the chicken rest for a few minutes after cooking.

Preparing the Tortillas

  • Warm the tortillas in a separate skillet or microwave for about 20-30 seconds.
  • If using a skillet, lightly toast them for added flavor and texture.

Assembling the Wraps

  • Lay the warmed tortillas flat on a plate and spread a layer of mayonnaise or dressing over each tortilla.
  • Once the chicken is cooked, slice it into strips and place it in the center of each tortilla. Top with lettuce, tomato, and cucumber.
  • Sprinkle cheese over the fillings if desired.
  • Roll the tortillas tightly to enclose the fillings, folding the sides over before rolling from the bottom up.

Serving

  • Slice each wrap in half diagonally and serve immediately or refrigerate for later.

Notes

To ensure crispiness, store leftovers in an airtight container with parchment paper between layers.
