Ingredients
  

For the Marinade

  • 1 head head of cauliflower, cut into florets Packed with nutrients; can substitute with broccoli or Brussels sprouts.
  • 1/4 cup olive oil Helps to crisp the cauliflower; can also use canola or avocado oil.
  • 1/4 cup orange juice Provides bright flavor; can use bottled juice, but watch for added sugars.
  • 1 teaspoon orange zest
  • 1 teaspoon garlic powder Can substitute with fresh minced garlic (1 clove = 1/4 tsp).
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1/4 cup breadcrumbs Optional for extra crispiness.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a bowl, whisk together the olive oil, orange juice, orange zest, garlic powder, onion powder, salt, and pepper.
  • Toss the cauliflower florets in the mixture until well coated.
  • Spread the cauliflower on a baking sheet in a single layer and sprinkle with breadcrumbs if using.

Cooking

  • Bake for 25-30 minutes, turning halfway through, until the cauliflower is crispy and golden brown.
  • Serve warm as a side dish or appetizer.

Notes

Can be served with dipping sauces like aioli. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to a month.
