  • 1 pound shrimp, peeled and deveined Fresh or frozen, thawed for best texture
  • 1 cup cooked rice
  • 1 cup cream of mushroom soup Can substitute with other cream-based soups
  • 1 cup shredded cheddar cheese Can substitute with mozzarella or pepper jack
  • 1 cup frozen mixed vegetables (peas, corn, carrots)
  • 1 tablespoon butter Dotted on top for richness
  • 1 teaspoon garlic powder Adjust to taste
  • to taste salt and pepper
  • for garnish Fresh parsley

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the cooked rice, cream of mushroom soup, and shrimp. Gently fold the ingredients together until incorporated.
  • Add the frozen vegetables, garlic powder, salt, and pepper to the mixture and stir well.
  • Transfer the mixture into a greased casserole dish and evenly spread it out.

Cooking

  • Sprinkle the cheddar cheese on top, then dot with small pieces of butter.
  • Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  • Let it cool for a few minutes before garnishing with fresh parsley and serving.

Notes

Perfect for weeknight dinners and can be made ahead of time. Great for leftovers! Store in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
