  • 2 fillets salmon High in omega-3 fatty acids.
  • 1 cup corn Can be fresh or frozen.

Cooking Essentials

  • 2 tablespoons olive oil Use a light olive oil for sautéing.
  • 2 cloves garlic, minced Adds flavor and aroma.
  • 2 cups vegetable or chicken broth Low-sodium is preferable.
  • 1/2 cup heavy cream For a lighter version, use half-and-half.
  • to taste salt and pepper For seasoning.

Garnish

  • 1 tablespoon fresh parsley Used for garnish.

Preparation

  • In a pot, heat the olive oil over medium heat.
  • Add the minced garlic and sauté until fragrant, about 30 seconds.
  • Stir in the orzo pasta and mix well for about 1 minute.
  • Add the broth and bring to a boil.
  • Reduce the heat, cover, and simmer for 10 minutes or until the orzo is tender.
  • In the last 2 minutes of cooking, gently place the salmon fillets and corn into the pot.
  • Once the salmon is cooked through, stir in the heavy cream, seasoning with salt and pepper to taste.
  • Remove from the heat and garnish with fresh parsley before serving.

Notes

Don’t overcook the salmon. Stir occasionally to prevent the orzo from sticking together. Use fresh ingredients for the best flavor. A squeeze of fresh lemon juice can enhance the flavors.
