  • 2 pieces boneless, skinless chicken breasts Chicken thighs can be used for more flavor.
  • 2 cups fresh spinach Frozen spinach can be used, make sure to thaw and drain.
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream Can substitute with half-and-half for a lighter option.
  • 3 cloves garlic, minced
  • 1 cup rotini pasta Any pasta shape can be used.
  • 2 tablespoons olive oil
  • to taste salt and pepper Season throughout for best flavor.
  • to taste Parmesan cheese for serving Use freshly grated for better flavor.

Preparation

  • In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  • Add the chicken breasts, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes on each side.
  • Remove the chicken from the skillet and set aside. In the same skillet, add the minced garlic and sauté until fragrant, about 1 minute.
  • Add the cherry tomatoes to the skillet and cook for about 2 minutes, until they start to soften.
  • Stir in the fresh spinach and cook until wilted, about 1-2 minutes.
  • Pour in the heavy cream and bring to a simmer, allowing it to thicken slightly.
  • Return the chicken to the skillet and allow it to soak up some of the sauce for a few minutes.
  • Meanwhile, cook the rotini pasta according to package directions, then drain and add it to the skillet.
  • Gently toss everything together, finish with a sprinkle of freshly grated Parmesan cheese, and serve immediately.

Notes

Store leftovers in an airtight container for up to 3 days. Freezing is possible for up to 2 months; thaw in the refrigerator overnight before reheating.
