Ingredients
  

For the Sweet Potatoes

  • 4 pieces small sweet potatoes Choose firm, smooth skins.

For the Filling

  • 1/2 cup Greek yogurt or sour cream Adds creaminess and protein.
  • 1/2 tablespoon pumpkin pie spice or ground cinnamon For flavoring.
  • 1 tablespoon maple syrup Natural sweetness.
  • 3 to 4 tablespoons brown sugar Optional, to taste.
  • 1 pinch salt

For the Topping

  • 2/3 cup chopped walnuts or pecans Finely chopped for texture.
  • 2 tablespoons butter Softened.
  • 2 tablespoons light brown sugar

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Pierce each sweet potato several times with a fork.
  • Place them in a greased baking dish and bake for 20 to 45 minutes.
  • Remove and let cool for a few minutes.
  • Slice each potato lengthwise and scoop out the flesh into a bowl.

Filling Preparation

  • In the bowl with the sweet potato flesh, add Greek yogurt, pumpkin pie spice, maple syrup, brown sugar, and a pinch of salt.
  • Mash until smooth and adjust sweetness if necessary.

Filling the Skins

  • Spoon the sweet potato mixture back into the skins, heaping slightly over the edges.

Topping Preparation

  • In a separate bowl, combine chopped nuts, softened butter, and light brown sugar.
  • Sprinkle this mixture over the filled potato skins.

Final Baking

  • Return the stuffed potato skins to the oven for an additional 12 to 15 minutes until bubbly and golden.
  • Drizzle with additional maple syrup before serving, if desired.

Serving

  • Serve the skins hot and enjoy!
