Main Ingredients

  • 4 large eggs, separated Egg whites give Cloud Bread its fluffy texture. Substitutable with aquafaba for a vegan version.
  • 1/2 teaspoon cream of tartar Stabilizes egg whites; can be substituted with lemon juice or vinegar.
  • 2 ounces low-fat cream cheese Adds flavor and moisture; can use dairy-free cream cheese for a vegan alternative.
  • 1 teaspoon Italian herb seasoning Provides flavor; customize with your choice of herbs.
  • 1/2 teaspoon sea salt
  • 1/4 - 1/2 teaspoon garlic powder

Instructions
 

Preparation

  • Preheat your oven to 300°F (150°C).
  • Line two large baking sheets with parchment paper.
  • In a stand mixer, beat the egg whites and cream of tartar on high speed until stiff peaks form, approximately 3-5 minutes.
  • In the same bowl, add the cream cheese and blend until smooth. Add the egg yolks one at a time, mixing well after each addition.
  • Mix in the Italian herb seasoning, sea salt, and garlic powder until well combined.
  • Gently fold the beaten egg whites into the cream cheese mixture.
  • Spoon about 1/4 cup of the mixture onto the prepared baking sheets, spreading each mound into a circle about 4 inches wide and 3/4 inch high.

Baking

  • Bake in the preheated oven for 15-18 minutes or until golden brown.

Notes

Store in an airtight container in the fridge for up to 3 days or freeze for up to a month. Reheat in a toaster or oven set to 300°F for about 5 minutes.
