  • 1 pound ground beef Lean ground beef or turkey can be used as a substitute.

  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes Use tomatoes with juice.
  • 1 can (15 oz) kidney beans, drained and rinsed Can substitute with pinto beans.
  • 1 can (15 oz) black beans, drained and rinsed Can substitute with any type of canned beans.
  • 1 bell pepper, chopped bell pepper, chopped
  • 2 tablespoons chili powder Essential for chili flavor.
  • 1 teaspoon cumin Can substitute with taco seasoning if needed.
  • to taste Salt and pepper Adjust according to preference.
  • 1 cup beef broth Use vegetable broth for a vegan option.

Optional Toppings

  • shredded cheese For topping.
  • sour cream For topping.
  • green onions For topping.

Preparation

  • In a skillet, heat a little oil over medium heat. Add the ground beef and cook, breaking it apart with a spatula until it’s no longer pink. Drain any excess fat.
  • Transfer the browned beef to the slow cooker.
  • Add the chopped onion, minced garlic, diced tomatoes (with juice), kidney beans, black beans, chopped bell pepper, chili powder, cumin, salt, pepper, and beef broth.
  • Stir everything together to ensure spices are evenly distributed.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Once done, serve hot with optional toppings.

Notes

Let the chili sit for at least an hour after cooking to allow flavors to meld. Best served with various toppings for a customized experience.
