Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour Can use cake flour for a lighter version.
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1/2 cup milk Whole milk is best, but almond or soy milk can be used.
  • 2 large eggs Substitutes can be made using flax eggs for a vegan option.
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted Ensure butter is warm, not hot, before adding.

For Frying

  • as needed oil for frying Heat to 350°F (175°C) before frying.
  • as needed powdered sugar for dusting Dust before serving for a perfect finish.

Preparation

  • In a large bowl, mix together the flour, sugar, baking powder, and salt.
  • In another bowl, whisk together the milk, eggs, vanilla extract, and melted butter.
  • Gradually pour the wet ingredients into the dry ingredients, stirring just until combined.

Frying

  • Heat the oil to 350°F (175°C) in a deep skillet or fryer.
  • Drop spoonfuls of the batter into the hot oil and fry until golden brown on all sides, about 2-3 minutes.
  • Remove beignets with a slotted spoon and place them on paper towels to drain excess oil.
  • Dust with powdered sugar before serving.

Notes

Serve with coffee or hot chocolate. Store them in an airtight container for up to 2 days, or freeze for later enjoyment.
