Marinade Ingredients

  • 1/3 cup fresh orange juice Fresh is preferred for vibrant flavor.
  • 2 tbsp fresh lime juice Fresh is preferred for vibrant flavor.
  • 1/4 cup olive oil Can substitute with avocado or canola oil.
  • 4 cloves garlic (minced) Fresh garlic is recommended; can use garlic powder if needed.
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano

Main Ingredient

  • 2 lb chicken breasts or thighs Can use skin-on for added flavor.

Preparation

  • In a large bowl, combine the orange juice, lime juice, olive oil, minced garlic, kosher salt, black pepper, cumin, smoked paprika, and oregano. Whisk together until well combined.
  • Add the chicken breasts or thighs to the marinade, making sure they are coated evenly. Cover the bowl with plastic wrap or transfer everything to a resealable bag.
  • Marinate for at least 2 hours, or up to 4 hours.

Grilling

  • Preheat your grill to medium-high heat (about 375°F to 450°F) and oil the grates.
  • Remove the chicken from the marinade, allowing excess marinade to drip off. Place the chicken on the grill.
  • Cook for 6-7 minutes on one side, then flip and continue grilling until the chicken reaches an internal temperature of 165°F.
  • Once cooked through, remove the chicken from the grill and let it rest for about 5 minutes before slicing or serving.

Notes

For serving, garnish with fresh cilantro or parsley and serve with tortillas or a fresh salad. Ensure to store leftovers in an airtight container to maintain freshness.
