  • 1/4 teaspoon salt
  • 1/4 cup milk
  • Powdered sugar for dusting
  • Filling of choice (e.g., whipped cream, fruit preserves) Can also use chocolate ganache or mascarpone cheese.

Preparation

  • Preheat the oven to 350°F (175°C). Grease and line a 15×10-inch jelly roll pan with parchment paper.
  • In a mixing bowl, beat the eggs and sugar until thick and pale. Add in the vanilla extract.
  • In another bowl, whisk together the flour, baking powder, and salt. Gradually add this to the egg mixture, alternating with the milk.
  • Pour the batter into the prepared pan and spread evenly.

Baking

  • Bake for 12-15 minutes until lightly golden and a toothpick comes out clean.
  • Remove from the oven, dust with powdered sugar, and invert onto a clean kitchen towel. Peel off the parchment paper.

Assembly

  • Spread your filling of choice over the surface of the cake, then roll it up tightly starting from the short end.
  • Wrap in plastic wrap and refrigerate for at least an hour before slicing and serving.

Notes

This roll cake is versatile; try different fillings and dusting types. Refrigerate for up to 3 days and can be frozen for up to one month.
