Ingredients
  

Nuts and Base

  • 1 cup nuts (pecans or walnuts) You can also use almonds or hazelnuts.

Caramel

  • 14 ounces soft caramels Use homemade caramel sauce or wrapped candies that can melt well.

Chocolate Coating

  • 8 ounces dark or semi-sweet chocolate chips Milk chocolate or white chocolate can also be used.
  • to taste sea salt Optional, for sprinkling.

Instructions
 

Preparation

  • Clear the counter and line two baking sheets with parchment paper.
  • Using a double boiler or microwave, melt the caramels until smooth and let cool slightly.

Forming Clusters

  • On the baking sheets, place about one tablespoon of nuts and top with melted caramel.
  • Chill the clusters in the refrigerator for about 15-20 minutes.

Chocolate Coating

  • Melt the chocolate chips until smooth and shiny.
  • Dip each nut and caramel cluster into the melted chocolate and place back on the parchment paper.
  • Sprinkle sea salt on top before the chocolate sets.

Cooling

  • Allow the chocolate turtles to cool completely at room temperature or in the refrigerator.

Notes

Store in an airtight container for up to 2 weeks. They can be frozen individually wrapped for longer storage.
