  • 2 cups shredded coconut Use unsweetened coconut for a healthier option.
  • 1 cup sweetened condensed milk Essential for binding the coconut; can substitute with coconut cream.
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips Can use dark or milk chocolate according to preference.
  • 1 pinch salt

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, and a pinch of salt. Mix well until everything is combined.
  • Scoop a tablespoon of the mixture and roll it into a ball. Place the balls on a lined baking sheet, spacing them about an inch apart.
  • In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between until smooth.
  • Once your macaroon bites are done baking and cooled slightly, dip each one into the melted chocolate, then place them back on the baking sheet.
  • Allow the chocolate to set at room temperature or place them in the refrigerator for quicker results.

Store in an airtight container for up to 1 week in the refrigerator or freeze for up to 2 months. Enjoy cold for the best taste experience.
