  • 1/4 cup cocoa powder For chocolate flavor; can use carob powder as a substitute.
  • 1/4 cup maple syrup Can be substituted with honey if not vegan.
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • Fresh fruits, nuts, or seeds for topping Optional; for garnish.

Preparation

  • In a mixing bowl, add the chia seeds, almond milk, cocoa powder, maple syrup, vanilla extract, and a pinch of salt.
  • Whisk the ingredients together until they are well blended.
  • Allow the mixture to sit for about 5-10 minutes, then whisk it again to prevent clumping.
  • Cover the bowl and refrigerate it for at least 2 hours or overnight.
  • Once set, serve the pudding chilled and add toppings as desired.

Notes

Store in the fridge for up to 5 days in an airtight container. Can freeze leftovers for up to 1 month.
