  • 2 tablespoons olive oil Enhances flavor and moisture.
  • 2 cloves garlic, minced Adds aromatic flavor.
  • 1 teaspoon ginger, grated Carefully enhances the marinade.
  • to taste Salt and pepper Season according to preference.

Instructions
 

Preparation of Marinade

  • In a medium bowl, combine pineapple juice, soy sauce, brown sugar, olive oil, minced garlic, grated ginger, and a pinch of salt and pepper. Whisk until well-mixed.

Marinating the Chicken

  • Place chicken thighs in a resealable bag or shallow dish. Pour marinade over the chicken, ensuring it's well-coated. Seal and refrigerate for at least 1 hour, preferably overnight.

Baking the Chicken

  • Preheat your oven to 375°F (190°C). Remove chicken from marinade and place in a baking dish, discarding the leftover marinade. Bake for 35-40 minutes, until internal temperature reaches 165°F (75°C).

Serving

  • Let the chicken rest for a few minutes before slicing. Serve with rice, veggies, or salad.

Notes

For extra crispy skin, broil for the last 2-3 minutes of cooking. Resting the chicken aids in moisture retention.
