Preparation

  • Preheat your oven to 400°F (200°C).
  • Heat olive oil in a large skillet over medium heat. Add the chopped onions and garlic, sautéing until they become soft and fragrant.
  • Add ground chicken to the skillet and cook until browned, stirring frequently.
  • Stir in the frozen mixed vegetables, thyme, rosemary, salt, and pepper. Mix until well combined and let it cook for an additional two minutes.
  • Pour in the chicken broth and milk, and let the mixture simmer for a few minutes.
  • Spread the chicken and vegetable mixture in a baking dish.
  • Top with mashed potatoes, spreading evenly over the filling.
  • Bake in the preheated oven for 25-30 minutes or until the top is golden brown.
  • Remove from the oven and allow to cool slightly before serving.
