  • 2 pieces chicken breasts Lean and quick-cooking; thighs can be used for a juicier alternative.
  • 4 slices bacon Adds a salty, smoky flavor; turkey bacon can be used as a healthier option.
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 200 g mushrooms, sliced Fresh mushrooms recommended for better flavor.
  • 1 cup chicken broth Vegetable broth can be used for a more robust flavor.
  • 1 cup cream Half-and-half or non-dairy alternatives can be used for a lighter version.
  • to taste Fresh parsley, chopped For garnish.
  • 2 tablespoons olive oil For cooking.
  • to taste Salt and pepper Season generously.

Preparation

  • Heat about 2 tablespoons of olive oil in a large pan over medium heat.
  • Add the bacon slices to the pan and cook until crispy, then remove and set aside.
  • In the same pan, add the chopped onion and minced garlic and sauté for 3-4 minutes until soft.
  • Add the chicken breasts, season with salt and pepper, and cook for about 5 minutes per side until browned.
  • Stir in the sliced mushrooms and cook for another 3-4 minutes until they soften.
  • Pour in the chicken broth and cream, bringing to a gentle simmer.
  • Return the crispy bacon to the pan and cook for 5-10 more minutes until the chicken is cooked through and the sauce thickens.
  • Garnish with fresh parsley before serving hot.

Notes

Store leftovers in airtight containers in the fridge for up to 3 days or freeze for up to 2 months. Reheat gently on the stove, adding broth or cream to loosen the sauce if needed.
