Ingredients
  

Main ingredients

  • 12 ounces penne pasta Can substitute with any pasta shape.
  • 2 cups mixed vegetables (bell peppers, zucchini, cherry tomatoes) Can use seasonal or frozen vegetables.
  • 2 cloves garlic (minced)
  • 1 medium onion (diced)
  • 2 tablespoons olive oil
  • 2 cups tomato sauce Use a variety you enjoy.

Cheese ingredients

  • 1 cup mozzarella cheese (shredded)
  • 1 cup cheddar cheese (shredded)
  • 1/2 cup parmesan cheese (for topping)

Seasoning

  • 1 tablespoon fresh basil or oregano Can use dried if fresh is not available.
  • to taste Salt
  • to taste Black pepper
  • 1/4 teaspoon red pepper flakes (optional) For some heat.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large pot of boiling salted water, cook the penne according to the package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, and sauté for 2-3 minutes until softened.
  • To the skillet, add your mixed vegetables and cook for an additional 5-7 minutes until tender.
  • Once the vegetables are tender, combine them with the cooked penne and 2 cups of tomato sauce in the skillet. Season with salt, black pepper, and red pepper flakes.
  • Stir in 1 cup each of mozzarella and cheddar cheese until well combined.
  • Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly.
  • Sprinkle the remaining mozzarella, cheddar, and parmesan cheese over the top.
  • Place it in the oven and bake for 25-30 minutes or until the cheese is bubbly and golden.
  • Once baked, allow to cool for a few minutes, then garnish with fresh basil or oregano before serving.

Notes

Consider portioning into individual oven-safe dishes for a charming presentation. Store in an airtight container in the fridge for 3-4 days, or freeze for up to 2 months before baking.
