Lasagna Ingredients

  • 8 pieces gluten-free lasagna noodles
  • 2 cups ricotta cheese Can be substituted with cottage cheese or vegan ricotta.
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce Store-bought or homemade can be used.
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • Salt and pepper to taste
  • 1 large egg (optional for extra creaminess) Omit for a lighter version.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Cook the gluten-free lasagna noodles according to the package instructions. Once done, drain and set aside.
  • In a large bowl, combine ricotta cheese, the egg (if using), oregano, basil, salt, and pepper.

Layering and Baking

  • Spread a layer of marinara sauce at the bottom of a baking dish.
  • Place a layer of noodles on top of the sauce, followed by a layer of the ricotta mixture, then a layer of mozzarella cheese.
  • Continue layering (sauce, noodles, ricotta mixture, mozzarella) until all ingredients are used, ending with marinara sauce, mozzarella, and Parmesan on top.
  • Cover the baking dish with foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 10-15 minutes until the top is bubbly and golden.
  • Let it cool slightly before serving.

Notes

For the best results, do not overfill layers and let the lasagna cool for a few minutes before slicing. Fresh herbs can be substituted for dried for better flavor.
