Ingredients
  

Main Ingredients

  • 1.5 lb ground beef (80–90% lean) Lean beef keeps the dish healthy while offering great flavor.
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced (or 1 tsp garlic powder)
  • 1 cup uncooked long-grain white rice (or 3 cups cooked) Rinse uncooked rice before using.
  • 2 cans cream of mushroom soup (10.5 oz each) Can use homemade cream sauce as a substitute.
  • 2 cups low-sodium beef broth Can substitute with chicken or vegetable broth.
  • 1 tbsp Worcestershire sauce
  • 0.5 cup sour cream (optional)
  • 2 cups sharp cheddar, freshly shredded, divided For better melting, use freshly shredded cheddar.
  • 0.5 tsp paprika
  • to taste Salt & black pepper
  • 1–2 tbsp butter or olive oil (for the pan) Use olive oil for a lighter option.
  • Chopped parsley, for garnish Add for a pop of color.

Preparation

  • Preheat your oven to 350°F (175°C) and butter a 9×13-inch baking dish.

Cooking the Beef and Onion

  • In a large skillet, add the ground beef and diced onion. Cook over medium heat for about 5–7 minutes until the beef is browned. Drain the fat.
  • Add minced garlic, and season with salt, black pepper, and paprika.

Mixing Ingredients

  • Remove from heat and mix in cream of mushroom soup, 1½ cups beef broth, Worcestershire sauce, optional sour cream, and 1 cup shredded cheddar. Stir until combined.

Combine with Rice

  • If using uncooked rice, rinse it and spread it evenly in the baking dish. Pour the beef mixture over the rice and add the remaining ½ cup of beef broth. Mix gently.

Baking the Casserole

  • Cover the dish with aluminum foil and bake for 45–55 minutes until the rice is tender.
  • If needed, add another ¼ cup of broth and bake an additional 8–12 minutes.

Adding Cheese

  • Uncover and sprinkle the remaining cheddar cheese on top. Bake another 8–10 minutes until cheese is bubbly and golden.

For Cooked Rice Method

  • Preheat the oven to 375°F (190°C). Stir 3 cups of cooked rice into the beef mixture, transfer to baking dish, top with cheese, and bake for 15–20 minutes.

Notes

Store leftovers in an airtight container for 3-4 days. You can freeze portions for later meals. Reheat at 350°F (175°C) for 20–30 minutes. Alter ingredients for dietary preferences as needed.
