  • 1 cup breadcrumbs Panko breadcrumbs can be used for extra crispiness or gluten-free breadcrumbs if necessary.
  • 1/2 cup grated Parmesan cheese Pecorino Romano can be used for a sharper taste.
  • 1/2 cup shredded mozzarella cheese
  • 3 cloves garlic, minced Fresh garlic is recommended.
  • 1 large egg Acts as a binder for the loaf.
  • 1/4 cup fresh parsley, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1/2 cup milk

Instructions
 

Preparation

  • Preheat the oven to 180°C (350°F).
  • In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, mozzarella cheese, minced garlic, egg, chopped parsley, salt, black pepper, Italian seasoning, and milk.
  • Mix gently with your hands to avoid overworking the chicken.
  • Transfer the mixture into a loaf pan or shape it into a loaf on a baking sheet lined with parchment paper.

Cooking

  • Bake in the preheated oven for 45 minutes, or until the center is cooked through and the top is golden brown.
  • Use a meat thermometer to check for an internal temperature of 75°C (165°F).
  • Allow the loaf to rest for 10 minutes before slicing.

Notes

Consider serving with marinara or a creamy garlic dip. Sprinkle extra parsley or Parmesan on top before serving for added flavor.
