Preparation

  • Start by washing and cutting your potatoes into small cubes (about 1 inch). Mince the garlic and chop the green onions. Cut the chicken thighs into bite-sized pieces.
  • Rinse the potatoes in water to remove excess starch, promoting crispiness while cooking.

Cooking

  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until they are golden brown (about 5-7 minutes).
  • Don't overcrowd the pan; let the chicken pieces have enough space to brown nicely.
  • Once the chicken is browned, add the cubed potatoes to the skillet along with the minced garlic, smoked paprika, and crushed red pepper flakes. Stir well to combine.
  • Stir occasionally to prevent sticking, and cook until the potatoes are fork-tender (about 10-15 minutes).
  • Lower the heat to medium-low. Sprinkle the shredded cheddar and Parmesan cheese evenly on top. Cover the skillet with a lid and let it cook for another 5-7 minutes until the cheese has melted.
  • If you want a nice crispy top, uncover the skillet for the last few minutes or broil it in the oven.

Finishing Touches

  • Once the cheese is melted, stir in the fresh rosemary and top with green onions. Serve hot with a dollop of sour cream or Greek yogurt.
  • Let it sit for a couple of minutes before serving to allow all the flavors to blend.
