Pasta and Vegetables

  • 8 ounces penne or rotini pasta Penne or rotini works well for holding onto the cheese and sauce.
  • 2 cups mixed vegetables (like bell peppers, zucchini, and spinach) You could substitute with broccoli, asparagus, or mushrooms.

Sauce and Cheese

  • 1 cup marinara sauce
  • 1 cup ricotta cheese Can use mascarpone for a richer flavor.
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese Sprinkled on top for a golden crust.

Seasoning

  • 1 teaspoon dried oregano
  • to taste Salt and pepper

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a large bowl, combine the cooked pasta, mixed vegetables, marinara sauce, ricotta cheese, mozzarella cheese, oregano, salt, and pepper.
  • Transfer the mixture to a baking dish and sprinkle the top with Parmesan cheese.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  • Let it cool slightly before serving.

Notes

Garnish with fresh basil or parsley for added color and flavor. This dish can be customized with different vegetables and proteins.
