  • 1 pound large strawberries Choose ripe strawberries for the best flavor.
  • 8 ounces softened cream cheese Use Neufchâtel for a lighter option.
  • 1/2 cup powdered sugar Can substitute with sugar alternatives like stevia.
  • 1 teaspoon vanilla extract Omit or substitute for almond extract for variation.
  • 1/4 cup graham cracker crumbs Can be substituted with crushed cookies like Oreos.

Preparation

  • Clean the strawberries by rinsing under running water. Pat them dry with a paper towel.
  • Remove the green tops and hollow out the center of each strawberry with a small paring knife, being careful not to break them.
  • In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Blend with a handheld mixer for 2-3 minutes until light and fluffy.
  • Fill a piping bag with the cheesecake mixture and pipe into each cored strawberry until generously filled.
  • Sprinkle graham cracker crumbs on top of each filled strawberry.

Notes

Chill the filled strawberries for about 30 minutes before serving for enhanced flavor. These can also be served with a drizzle of melted chocolate for extra indulgence.
