  • 2 pieces Flour tortillas Corn tortillas can be used for a gluten-free option.
  • 1 cup Shredded cheese (cheddar or mozzarella) Feel free to experiment with Jack cheese or vegan alternatives.
  • 1 cup Bell peppers (sliced) You can substitute with sliced jalapeños or spinach.
  • 1 cup Onions (sliced)
  • 2 tablespoons Olive oil For brushing the tortillas.
  • to taste Salt
  • to taste Pepper

Instructions
 

Preparation

  • Preheat a skillet over medium heat.
  • Brush one side of a tortilla with olive oil, then place it in the skillet oil side down.
  • Sprinkle a generous amount of shredded cheese over one half of the tortilla.
  • Add sliced bell peppers and onions on top of the cheese.
  • Fold the tortilla over and cook for 2-3 minutes until the bottom is golden.
  • Carefully flip the quesadilla with a spatula and cook on the other side until golden.
  • Remove from skillet, slice into wedges, and serve warm.

Notes

For added flair, garnish with fresh cilantro or a sprinkle of lime juice before serving. Store leftovers in an airtight container for up to 3 days.
