  • 2 cups sweet corn, charred Fresh, charred sweet corn is preferred.
  • 1 ripe avocado, diced Substitute with mango or cooked black beans if allergic.
  • 1 cup cherry tomatoes, halved Regular tomatoes can be used if out of season.
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped Can be substituted with parsley or basil.
  • 1 Juice of lime Fresh lime juice is recommended.
  • to taste Salt and pepper To enhance flavors.
  • to taste Olive oil (optional) Use for extra flavor if desired.

Preparation

  • In a large mixing bowl, combine the charred sweet corn, diced avocado, cherry tomatoes, red onion, and cilantro. Gently fold everything together.
  • Drizzle with fresh lime juice and olive oil (if using).
  • Season generously with salt and pepper to taste.
  • Carefully toss all the ingredients together until well mixed.
  • Serve immediately or chill in the refrigerator for 15-30 minutes.

Notes

Store leftovers in an airtight container and consume within 2 days. Add avocado just before serving to prevent browning.
