Ingredients
  

For the Carrot Hummus

  • 2 large carrots, peeled and chopped Fresh carrots enhance flavor.
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 2 tablespoons tahini Can be substituted with almond or sunflower seed butter.
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced Fresh garlic enhances flavor.
  • Salt to taste Adjust according to preference.
  • Olive oil for drizzling (optional)

For the Za'atar Pita Chips

  • 4 pieces pita bread pockets, cut into triangles
  • 2 tablespoons olive oil
  • 2 teaspoons za'atar seasoning Could substitute with Italian herbs.
  • Salt to taste Adjust according to preference.

Instructions
 

Preparation

  • In a saucepan, bring water to a boil. Add the chopped carrots and cook until tender, about 10-15 minutes.
  • In a blender or food processor, combine the cooked carrots, chickpeas, tahini, lemon juice, garlic, and salt. Blend until smooth.
  • Preheat your oven to 375°F (190°C). On a baking sheet, toss the pita triangle pieces with olive oil, za'atar seasoning, and salt.

Cooking

  • Bake the pita chips in the preheated oven for 10-12 minutes or until crispy and golden.
  • Spoon the hummus into a serving bowl and drizzle with olive oil. Serve alongside the freshly baked za'atar pita chips.

Notes

Store hummus in an airtight container for up to 4 days in the fridge. For longer storage, freeze for up to 3 months. Reheat gently with water if too thick.
