  • 2 pieces chicken breasts Can substitute with chicken thighs or tofu for variation.
  • 1 cup pineapple chunks Can use fresh or canned; drain syrup if using canned.
  • 2 tablespoons soy sauce Use low-sodium or tamari for gluten-free option.
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, minced
  • 1 teaspoon garlic, minced
  • 2 cups cooked rice
  • Salt and pepper to taste
  • Chopped green onions for garnish

Preparation

  • In a large pan, heat 1 tablespoon of sesame oil over medium heat.
  • Season the chicken breasts with salt and pepper generously on both sides.
  • Add the seasoned chicken breasts to the pan and cook for about 5-7 minutes on each side until they are golden brown and cooked through.
  • Once cooked, carefully remove the chicken from the pan and set it aside on a plate.
  • In the same pan, add the minced garlic and ginger. Sauté for about 1 minute until fragrant.
  • Add the pineapple chunks along with soy sauce and honey. Cook for another 3-5 minutes until caramelized.
  • Place the chicken back into the pan, coating it in the pineapple glaze, and cook for an additional minute.
  • Serve the Caramelized Pineapple Chicken over the cooked rice and garnish with chopped green onions.

Notes

Refrigerate leftovers in an airtight container for up to 3 days. For freezing, use freezer-safe bags and thaw overnight before reheating on the stovetop.
