Pasta Ingredients

  • 8 oz pasta (fettuccine or penne) Choose your preferred type of pasta.

Shrimp Ingredients

  • 1 lb shrimp, peeled and deveined Substitute with chicken or tofu if needed.
  • 2 tablespoons Cajun seasoning Create your own mix if necessary.
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced Watch closely; it can burn quickly.
  • 1 cup heavy cream Light cream or half-and-half can be used.
  • 1 cup grated Parmesan cheese Freshly grated is preferable.
  • to taste Salt and pepper Season to your preference.
  • to garnish Chopped parsley For presentation.

Preparation

  • Boil the pasta according to package instructions until it’s al dente. Drain and set aside. Reserve a little pasta water before draining.
  • In a large skillet, heat olive oil over medium heat. Add the shrimp and sprinkle with Cajun seasoning. Cook until the shrimp are pink and cooked through, about 3-4 minutes.
  • Add minced garlic to the skillet and sauté for 1 minute until fragrant.
  • Pour in the heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and creamy.
  • Toss the cooked pasta in the sauce until well coated. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.
  • Season with salt and pepper to taste. Adjust the seasoning according to your preference.
  • Serve hot, garnished with chopped parsley.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2-3 days. It's best served hot, and can be paired beautifully with crisp white wine or iced tea. Customize by adding extra veggies or using chickpeas for a vegan version.
