  • 1/2 cup Buffalo sauce Adjust according to heat preference.
  • 4 oz cream cheese, softened Can substitute with Greek yogurt or non-dairy cream cheese.
  • 1 cup shredded cheddar cheese For added cheesiness.
  • 1/4 cup green onions, chopped For flavor and garnish.

Wrapper and Cooking Ingredients

  • 12 pieces egg roll wrappers Can substitute with spring roll wrappers.
  • Oil for frying oil for frying Use as needed for frying.
  • Cooking spray cooking spray If baking the egg rolls.

Preparation

  • In a bowl, combine the shredded chicken, Buffalo sauce, cream cheese, cheddar cheese, and chopped green onions to create the filling.
  • Take an egg roll wrapper and place about 2 tablespoons of the chicken mixture in the center.
  • Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll tightly, sealing the edges with a bit of water.

Cooking

  • Heat oil in a pan over medium heat and fry the egg rolls until golden brown and crispy, or bake in a preheated oven at 400°F (200°C) for about 20 minutes.
  • Serve hot with your favorite dipping sauce.

Notes

Keep egg rolls fresh by storing in an airtight container in the fridge for up to 3 days. For the best crunch, reheat in the oven.
