  • 2 cups broccoli florets, cooked and chopped Fresh or thawed frozen broccoli works.
  • 1 cup shredded cheddar cheese Cheddar is preferred; can substitute with mozzarella or gouda.
  • 1/2 cup breadcrumbs Panko can be used for extra crispiness.
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • to taste salt and pepper
  • as needed Oil for frying Use oils with high smoke points.

Preparation

  • In a large bowl, combine the cooked broccoli, cheddar cheese, breadcrumbs, Parmesan cheese, onion, garlic, egg, salt, and pepper. Mix until well combined.
  • Scoop out portions of the mixture with your hands and form them into balls, about the size of a golf ball.
  • In a frying pan, heat about 1/2 inch of oil over medium heat.
  • Fry the balls in batches until golden brown and crispy, about 3-4 minutes on each side.
  • Once golden brown, remove the balls from the pan and drain them on paper towels. Serve warm.

Notes

For best results, avoid overmixing to maintain a light texture. You can bake the balls at 400°F for 20-25 minutes if preferred. Serve with your favorite dipping sauce.
