  • 1 cup quinoa Packed with protein and gluten-free.
  • 2 cups broccoli florets Fresh add crunch and nutrition.

  • 1/4 cup red onion, diced
  • 1/4 cup walnuts, chopped

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar

Preparation

  • Rinse the quinoa under cold water to remove its natural coating (saponin).
  • Cook the quinoa according to package instructions and allow it to cool.
  • In a large bowl, combine broccoli florets, diced apple, red onion, and walnuts.
  • In a separate bowl, whisk together olive oil, apple cider vinegar, salt, and pepper.
  • Once cooled, add quinoa to the vegetable mixture and pour the dressing over.
  • Gently toss everything together until well combined.
  • Serve chilled or at room temperature.

Notes

Allow the salad to sit for about 30 minutes after mixing to enhance flavor. Store in the fridge for up to 3 days.
