Preparation of Filling

  • In a mixing bowl, combine the softened cream cheese, blueberries, powdered sugar, and vanilla extract. Mix until well incorporated.
  • Use a fork to gently mash the blueberries as you mix; this will release their juices and enhance the flavor.

Filling the Wrappers

  • Place an egg roll wrapper on a clean surface with one corner facing you. Spoon about 1-2 tablespoons of the filling into the center.
  • Be careful not to overfill the wrappers; this makes sealing them much easier!

Sealing Egg Rolls

  • Fold the bottom corner over the filling, then fold in the side corners, and roll tightly to seal. Use a bit of water on the edges to help seal.
  • Ensuring a tight seal helps keep the filling from leaking while frying.

Frying

  • In a deep skillet, heat about 2 inches of oil over medium heat until a small drop of batter sizzles upon contact.
  • Carefully add the egg rolls to the hot oil in batches, being cautious not to overcrowd. Fry until golden brown, about 3-4 minutes on each side.
  • Flip the egg rolls halfway through cooking for even browning.

Serving

  • Remove the egg rolls and place them on a paper towel-lined plate to drain excess oil. Dust with powdered sugar before serving.
