  • 1/2 cup cream cheese, softened Ensure it's soft to avoid lumps.
  • Zest of 1 orange
  • Juice of 1 orange

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  • In a large bowl, cream together the softened butter and sugar until light and fluffy.
  • Add in the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  • In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  • Gently fold in the cranberries, white chocolate chips, orange zest, and juice.
  • Spread the batter evenly into the prepared pan, leveling it with a spatula.
  • In a separate bowl, mix the cream cheese until smooth, then spoon dollops over the bar batter and swirl gently with a knife.

Baking

  • Bake for 25-30 minutes, until golden brown and a toothpick inserted comes out clean.
  • Allow the bars to cool completely in the pan before cutting them into squares.

Notes

Store in an airtight container for up to one week; freeze for up to 3 months. Use parchment paper for easy removal from the pan.
