Preparation

  • In a medium bowl, whisk together the soy sauce, olive oil, honey, minced garlic, ground ginger, black pepper, and lemon juice until well blended.
  • Place your chicken thighs in a resealable plastic bag or a shallow dish and pour the marinade over the top, ensuring the chicken is thoroughly coated. Marinate for at least 30 minutes, or up to overnight in the fridge.
  • When you’re ready to cook, remove the chicken from the marinade and let it come to room temperature for about 15 minutes.
  • Grill, bake, or pan-sear the chicken thighs until they reach an internal temperature of 165°F (74°C), usually about 6-7 minutes per side on the grill. Let the chicken rest for a few minutes before serving.

Notes

Store leftovers in an airtight container for up to 3 days or freeze in a freezer-safe bag for up to 3 months. Allow marinated chicken to thaw in the refrigerator before cooking. Always check the cooking temperature for safety.
